Our Chef Director Phil Williams and his super-talented team are experts in crafting menus that strike the perfect balance between sublime flavours, luxury and creativity.
Adding a personal touch with dishes from your travels and embracing seasonal produce can also deliver a super elegant feast that will ensure your guests are talking about the food long after the event.
Here are some of Chef’s favourite dishes that combine classic ingredients with an ever-so contemporary twist….

Start As You Mean To Go On
Nothing screams summer quite as much as a beautifully prepared salad. Made with the freshest, locally sourced ingredients, our Creamy Burrata and Sticky Tomato Salad combines crisp chicory, handfuls of rocket, toasted hazelnuts and a zingy orange dressing.
This dish looks every bit as good as it tastes and is literally summer on a plate!
Alternatively, why not bring the flavours of your favourite holiday destination to the table with our handmade Truffled Cheddar Cheese Arancini, served on a rich Heritage Tomato Sauce finished with Balsamic and Micro Rocket – all the flavours of Italy in one delicious bowl!

The Main Event
Fish is traditionally seen a s a bold choice for your main course, but with more guests choosing to go ‘meat-free’, fresh seasonal varieties, finished beautifully can make a sublime option for the main event.
We adore our Roast Sea Trout dish served with a Pea, Mint and Bacon Chowder, drizzled with roasted lemon oil. Colourful, super-tasty and seasonal, this simple but effective dish is a real show-stopper.
Staying traditional, but with flavours that really pack a punch, our Serrano wrapped Chicken Breast with Cider Fondant Potato, charred Leeks, roasted Carrots and White Wine Mustard Cream is a foodie dream and elevates the classic ‘Chicken Main’ to a whole new level.

Decadent Desserts
This is where you can really ring the changes when it comes to indulgent dining! Opt for a decedent dessert station and treat your guests to a banquet of sublime sweet treats, all presented ‘buffet style’ – think oodles of cake, marvellous mousses and rivers of chocolate.
Our pastry Chef Jo is passionate about puddings and constantly re0inventingthe wheel, so ask the team about her latest creations and signature treats!

We used Cheeky Chilli for our wedding at Talhenbont Hall - would strongly recommend! They had a large range of choices on their menu but also made it clear we could have anything else off the menu. The food was delicious and we got lots of compliments, and the staff were really organised and relaxed. The evening food was really popular and the staff made sure it was distributed to everyone.
